Summer Blueberry Smoothie with Granola Crunch June 13 2015


1 cup fresh blueberries, plus extra for garnish, rinsed

1 cup Plain Greek Yogurt

2 T. maple syrup

1 t. freshly squeezed lemon juice

1/3 cup whole milk

2 heaping T. granola

Place blueberries in blender or food processor.  Puree 1 minute.  Add yogurt, maple syrup, lemon juice and milk.  Blend until smooth, about 1 minute.  Add extra milk as needed for desired thickness.  You can also throw in a banana for even more deliciousness.  Pour into tall glasses.  Top with sliced blueberries and granola.

Yield:  2 cups

Take your smoothie and a straw and a long spoon (for eating the crunchy stuff and getting every last bit from the bottom of your glass), grab a friend or your favorite book.  Find a cozy spot under a nice big tree.  Sit, sip, read and enjoy.
