LIME HAS ARRIVED...and so have Summer Popsicles June 01 2015
Coconut Lime Popsicles by The Kitchen Corner (www.thecornerkitchenblog.com)
- 1 14-ounce can light coconut milk
- 1 cup skim milk
- 1/4 cup sugar
- 2 limes, juiced & zested
- 1/2 cup unsweetened shredded coconut
In a saucepan, over medium heat, combine coconut milk, skim milk and sugar. Whisk until sugar is dissolved, about 3-4 minutes. Remove from the heat and cool fully.
When the milk mixture has cooled, stir in lime juice and zest, and shredded coconut.
Pour the mixture into the popsicle molds. Freeze at least 3-4 hours.
To remove the popsicles, run the molds under hot water for a few seconds.
Yield: Makes 10 popsicles
